The antiquity of this breed, which originated in Scotland, has earned it the nickname of ‘the closest living relation of the aurochs’. Its small size, gentle nature, and very British look add to the high esteem in which the breed is held. It is its hardiness, however, that allows it to withstand harsh climates and makes it ideally suited to grazing land of poor agricultural value. It is often used to maintain nature reserves or wetlands

At La Ferme de l’Aurochs, highland cattle are raised in an integrated non-housed system, grazing the marshlands during the summer months, and fed on hay during the winter.

Their lean meat is prized by private consumers as well as restauranteurs.
